DIRECTION FOR PREPARING YAM FLOUR
– Boil desired volume of water to about 100 o C (212 o F)
– Gradually add desired amount of Kalida premium yam flour while stirring with a hand mixer
o Alternatively, boil the water to about 70 o C (158 o F), gradually add the flour while heating
to 100 o C (212 o F)
– It is important to add the flour gradually to prevent lumps or fish eyes
– Reduce the heating while stirring for a smooth blend
– Add small amount of cold water and heat for about 2-4 minutes
– Stir again to get desired smooth blend
Note: The texture of the final blend depends on the heat applied while preparing the yam flour
