PLANTAIN CAKE/BREAD
– 500g Kalida foods plantain flour
– 500g butter (melted)
– 500g eggs (separated)
– 300g honey
– 240ml buttermilk
– 3 teaspoons baking powder
– 1 teaspoon baking soda
– 1 table spoon vanilla extract (or as desired)
DIRECTIONS
– Separate the egg white from the yoke. Beat the egg whites until stiff and set aside.
– In a mixer combine the dry ingredients (flour, baking powder and baking soda) and
mix.
– Add the egg yoke ad honey and mix, it will be become crumbly
– Afterwards add the melted butter and flavour and mix well.
– Add in the buttermilk (see note on how to make buttermilk)
– Fold in the stiff white eggs using a low speed until well combined.
– Divide the batter into two bread pans
– or any cake pan of your choice and bake using 150 degrees Celsius (this is dependent
on the hotness of your oven).
Note:
For butter milk add 1 tablespoon vinegar or fresh lemon juice to 1 cup (240ml) of milk and
stir. Allow to rest for about 5-10 minutes.
